5 Things I Know For Sure

My Favorite Recipe:

Chicken Marsala

4 boneless skinless chicken breasts (about 1 1/4 lb)
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons olive or vegetable oil
2 cloves garlic, finely chopped
1 cup sliced fresh mushrooms (3 oz)
¼ cup chopped fresh parsley or 1 tablespoon parsley flakes
1 cup of beef broth
½ cup dry Marsala wine

Hot cooked pasta, if desired

  • Between sheets of plastic wrap or waxed paper, flatten each chicken breast to 1/4-inch thickness. In shallow dish, mix flour, salt and pepper. Coat chicken with flour mixture; shake off excess flour.
  • Add chicken to 10-inch skillet. Cook about 8 minutes, turning once, until brown.
  • In skillet, heat oil over medium-high heat. Cook garlic, mushrooms and parsley in oil 5 minutes, stirring frequently.
  • Add wine and beef broth. Cook 8 to 10 minutes or until chicken is no longer pink in center. Serve with pasta.

Author Bio:

Jim Reilly is a new science fiction / fantasy novelist. He is a married father of four, born and raised in Long Island. After going back to college and finishing with an MBA, some of his professors gave accolades to his writing prowess. With that and encouragement from his wife, he wrote his first novel, Evolution.

The success of Evolution has inspired Jim to continue his writing efforts and finish his next science fiction / fantasy novel, Seaville.

From an early age, Jim always had a fascination with science, science fiction, and fantasy to a point that it became a passion of his. Now he enjoys putting that passion to paper. He has already penned his next book and is working on another.
